Chicken & Zucchini Fritters

 
 
Golden-brown chicken and zucchini fritters, pan-fried to a crisp, served on a rustic wooden board with a side of fresh herbs and a dollop of cooling yogurt dip.

INGREDIENTS

1 small zucchini, grated and squeezed

1 cooked chicken breast, shredded

1 egg

2 tbsp almond flour

½ tsp mixed herbs

Salt and pepper to taste

Olive oil spray (for greasing basket)


METHOD

Mix all ingredients in a bowl until well combined.

  • Form into 4 small patties and place in greased air fryer basket.

  • Air fry at 180°C (360°F) for 10–12 minutes, flipping halfway.

  • Serve with a side of plain yoghurt or salsa and side salad.
